<li class="ingredients-list__item">2 tbsp Worcestershire sauce</li>
<li class="ingredients-list__item">2 beef stock cube, crumbled</li>
<li class="ingredients-list__item">1kg stewing beef</li>

<h2 class="responsive-tabs__pane-title">Method</h2>
<ol class="method__list">
<li class="method__item">Heat oven to 160C/140C fan/gas 3. Put the kettle on. Put the celery, onion, carrots, bay and 1 thyme sprig in a casserole with 1 tbsp oil and the butter. Soften for 10 mins, then stir in the flour until it doesn’t look dusty anymore, followed by the tomato purée, Worcestershire sauce and beef stock cubes.</li>
<li class="method__item">Gradually stir in 600ml hot water, then tip in the beef and bring to a gentle simmer. Cover and put in the oven for 2hrs 30 mins, then uncover and cook for 30mins – 1hr more until the meat is really tender and the sauce is thickened.</li>

										<content:encoded><![CDATA[<p>Incredible Cheshire Rib of Beef well hung</p>
<p><strong>Recipe Suggestion: Herb &amp; pepper crusted rib of Beef</strong></p>
<p><img decoding="async" src="media/wysiwyg/recipe-image-legacy-id--837653_11.jpg" alt="" />Prep: 10 mins<br />
Cook: 2 hours 30 mins plus 30 mins resting<br />
Serves: 8</p>
<p><strong>Ingredients:</strong><br />
1 tbsp rock salt<br />
2 tbsp cracked black peppercorn<br />
3 garlic clove, crushed<br />
small bunch rosemary, finely chopped<br />
small bunch parsley, chopped<br />
4 tbsp olive oil<br />
3kg rib of beef on the bone</p>
<p><em>For the gravy:</em><br />
2 onion, sliced<br />
250ml red wine<br />
400ml fresh beef stock</p>
<p><strong>Method:</strong></p>
<ol>
<li>Heat oven to 220C/200C fan/gas 7. Mix the rock salt, peppercorns, garlic, rosemary, parsley and olive oil. Rub this mixture all over the beef rib then place in a roasting tin. Put in the oven and cook for 30 mins, then turn the oven down to 160C/140C fan/gas 3 and cook for a further 1 hr 20 mins. Remove from the oven, transfer the beef to a board, cover with tin foil and rest for 30 mins before carving.</li>
<li>While the beef rests, make the gravy. Pour off all but 2 tbsp of fat from the roasting tin and reserve any juices. Fry the onions in the roasting tin over a medium heat for about 10 mins, then add the wine, stock and reserved juices. Keep cooking for a further 10 mins to reduce to a thick sauce, season well and serve alongside the roast beef.</li>

<li class="ingredients-list__item">250g unsalted butter, melted and skimmed to give about 200ml</li>

<h2 class="responsive-tabs__pane-title">Method</h2>
<ol class="method__list">
<li class="method__item">Heat oven to 200C/fan 180C/gas 6. Put the steak on a plate and rub with 2 tbsp extra-virgin olive oil and plenty of black pepper and flaky sea salt. Leave to marinate at room temperature for about 10 mins. Heat a heavy-based ovenproof frying pan until searingly hot.</li>
<li class="method__item">Add the meat to the pan, with oil from the plate, the garlic cloves, thyme and bay leaf. Sear the steak for 3 mins on the first side until well browned, basting with the oil and herbs as it cooks. Carefully tip off the oil, add another 2 tbsp, then sear the second side of the steak in the same way. Quickly brown around the edges, then slide the pan into the oven and roast for 15 mins, turning over halfway through.</li>
<li class="method__item">Take the steak from the pan and sit it on a rack over a roasting tin. Tip the oil, herbs and garlic from the pan over the steak, then leave to rest for 15-20 mins. Leave the steak uncovered – covering with foil will make the steak steam and lose its crisp crust.</li>
<li class="method__item">Meanwhile, start the hollandaise. Put a medium pan of water on to boil. Put the vinegar, basil stalks, bay leaf and spices into a small pan. Boil down to about 3 tbsp, then strain. Put the egg yolks into a large, deep bowl, add 1 tbsp cold water and 1 tbsp of the vinegar reduction, then whisk briefly until light and frothy.</li>
<li class="method__item">Put the bowl over, but not touching, the simmering water, then whisk to a light, airy foam. Now gradually add the butter, little by little, whisking all the time to make a silky yellow sauce. Prevent the sauce overheating by lifting the bowl on and off the pan, adding a splash more water if it starts to get too thick. The sauce can be kept warm for up to 30 mins by sitting the bowl in a bath of just-warm water. If it gets too hot, the sauce will split. Just before serving, finely chop the basil and stir into the sauce with the lemon juice and seasoning to taste.</li>

<li>1 onion</li>
<li>olive oil</li>
<li>1 heaped teaspoon ground coriander</li>
<li>12 Jacob’s cream crackers</li>
<li>2 teaspoons dried oregano</li>
<li>2 heaped teaspoons Dijon mustard</li>
<li>500 g quality minced beef</li>
<li>1 large free-range egg</li>
<li>2 sprigs of fresh rosemary</li>
<li>12 slices of higher-welfare smoked bacon or pancetta</li>
<li>1 lemon</li>
</ul>
<p class="col-md-12 ingredient-wrapper"><strong>TOMATO SAUCE </strong></p>

<li>1 onion</li>
<li>2 cloves of garlic</li>
<li>½-1 fresh red chilli</li>
<li>olive oil</li>
<li>1 tesapoon smoked paprika</li>
<li>1 x 400 g tin of chickpeas</li>
<li>2 tablespoons Worcestershire sauce</li>
<li>2 x 400 g tins of quality plum tomatoes</li>
<li>2 tablespoons balsamic vinegar</li>
</ul>

<h2>Method</h2>

<li>Preheat the oven to full whack.</li>
<li>Peel, finely chop and place the onion in a large frying pan over a medium-high heat with 2 tablespoons of oil.</li>
<li>Season, add the cumin and coriander and fry for around 7 minutes, or until softened and lightly golden, stirring every 30 seconds. Remove to a large bowl to cool.</li>
<li>Wrap the crackers in a tea towel and smash up until fine, breaking up any big bits with your hands.</li>
<li>Add to the bowl of onion with the oregano, mustard and minced beef. Crack in the egg and add a really good pinch of sea salt and black pepper. With clean hands, scrunch and mix it up well.</li>
<li>Move the meat mixture to a board, then pat and mould it into a large, rugby-ball shape and rub over a little oil.</li>
<li>You can either cook it now or put it on a plate, cover, and pop in the fridge until needed. If you&#8217;re cooking it now, place the meatloaf in a casserole-type pan or baking dish, then pop in the hot oven.</li>
<li>Immediately reduce the temperature to 200ºC/400ºF/gas 6 and cook for 30 minutes.</li>
<li>Meanwhile, for the sauce, peel and chop the onion into 1cm dice, then peel and finely slice the garlic along with the chilli.</li>
<li>Place in a large frying pan on a medium-high heat with 2 tablespoons of oil, the paprika and a pinch of sea salt and black pepper.</li>
<li>Cook for around 7 minutes, or until softened and lightly golden, stirring every 30 seconds or so.</li>
<li>Drain and add the chickpeas, along with the Worcestershire sauce, tomatoes and balsamic vinegar.</li>
<li>Bring to the boil, breaking up the tomatoes with the back of a spoon, then reduce the heat and simmer for 10 minutes. Taste the sauce and season if needed.</li>
<li>To finish, pick the rosemary leaves into a bowl. Remove the meatloaf from the oven and pour all the fat from the pan over the rosemary, mixing well.</li>
<li>Spoon your sauce around the meatloaf, lay the slices of bacon or pancetta over the top and scatter over the rosemary leaves. Put the pan back in the oven for 10 to 15 minutes, or until the bacon turns golden and the sauce is bubbling and delicious.</li>
<li>Delicious served with a mixed-leaf salad and lemon wedges for squeezing over.</li>
