We cut your goat and kid meat fresh to order here at Chestnut meats butchery.    Goat and kid needs to be cooked long and slow and in liquid to get the best out of your meat.

We recommend cooking goat for at least 4.5 to 5 hours in liquid.  This tenderizes and softens the diced goat.

Goat diced on the bone is best for traditional curries. Marinate in advance and allow atleast 5 hours for cooking.:  Low and slow is the key ( 160 degrees Gas 4) You can use Levi Roots recipe for his best Curry goat.  However cook in a slow cooker for best results goat needs time you can cook this quickly!!

Goat off the bone is ideal for a Tagine or goat pie.  Use as you would diced beef and cook in lquid with spices and vegetables for atleast 5 hours.

Goat mince is as versatile as beef mince and can be used in chillis and bolognese and to make burgers.

Goat neck is an alternative to lamb neck and is brainsed then slow cooked for 5-6 hours til it is falling off the bone.  Can be cooked in wine and stock.

Goat chops:  marinade first then we recommend grilling chops on a BBQ or in the oven. Chops cook within 35 to 40 mins on 180 degree oven.

We make goat burgers onsite and these can be cooked in a pan, BBQ or cooked in the oven. Treat them as you would a beef burger and serve int eh same way.

Goat sausages can be grilled in the oven or pan fried.  Again they will be cooked in 30 minutes in an oven at 180 degrees.

Kid goat joints: like leg or shoulder  require braising in liquid and cooking in foil in

the oven.  Cook in wine or stock slowly for around 5 hours at 150 degrees. You want the meat to fall off teh bone.  You can serve almost like pulled pork.
